Brazilian Christmas Dinner Special

Stuffed Loin With Mango Sauce


Lombo recheado ao molho de manga



Ingredients:


. 1 pork loin of about 4.5 pounds

Spices:

. Juice of 2 oranges
. 2 cups non sweet white wine
. 1 tablespoon of rosemary
. 1 tablespoon of sage
. black pepper to taste
. 5 crushed cloves of garlic, 

. 1  tablespoon of  salt
. 3 tablespoons of melted butter

Filling
. 0.44 pounds of chopped bacon
. 3 tablespoons of butter
. 3 small green apples chopped
. 1 large onion, chopped
. 2 crushed cloves of garlic
. 1 tbsp Worcestershire sauce
. 2 tbsp of chopped parsley
. 2 tablespoons of green onions, chopped
. 2 cups of chopped bread

Sauce sleeve
. 5 medium mangos  thinly sliced
. 1 large grated onion
. 1 teaspoon of salt
. 1 tbsp curry
. black pepper to taste
. 1/2 cup of sugar
. 1 teaspoon  ground ginger
. 1 teaspoon nutmeg powder
. 1 tbsp of sweet paprika
. 1 cup of water

Preparation

A day before, make several holes in the back with a fork and place on a platter with condiments, butter . Always turn the loin so that the seasoning penetrates well. The next day, put the pork on a baking sheet lined with foil and greased with butter. Bathe with the spices of the dish and distribute the melted margarine over the loin.

Cover with foil and bake in a moderate oven for an hour. At half time turn the pork to roast evenly and drizzle with the sauce that formed in the pan. Remove the foil and bake for about 30 minutes. Remove from the oven and still warm, make slices without cutting all the way. Reserve.

Filling
Place the bacon in the butter in a pan and fry it until golden. Stir in green apple, onion, garlic and cook for five minutes. Add the remaining ingredients and cook for another five minutes. Reserve.

Mango Sauce
Mix all ingredients and cook. When it boils, lower the heat and cook well, stirring occasionally until uniform (about ten to 15 minutes). Reserve.

Assembly
Place the pork roast in a baking dish. Switch between a slice and another a little of the sauce and the filling. Use the leftover sauce and stuffing to decorate around the plate. Bring to heat and serve immediately.

Cream Cheese Flan



You will need:

For the Flan

1 can of condensed Milk
1 can of Milk (use the empty condensed Milk can to measure) 
5 eggs
1 box of cream cheese (8 ounces)

For the Caramel:

1 cup of sugar
1/2 cup of hot water.


How to Prepare:

Preheat oven to 350°F.

In a small pan, combine sugar and water, and boil rapidly until a light golden color.
Pour sugar into the pan of your choice,I use a bunt-pan but the curves make it a little trickier. Any basic pie pan will due. Coat the bottom and sides. Let cool.

The easiest way to ruin your flan is by burning your sugar. Take your time and use a lower heat so the sugar wont come out too hard.

In a blender, mix condensed milk, eggs,cream cheese & milk together.Blend for 2 or 3 minutes.Pour mixture into the caramelized sugar-coated 
bunt-pan.

 ..

Place dish in large roasting pan or baking pan. Add enough hot water to come halfway up sides of pie dish. The flan shouldn't float. Bake flan in water bath for 90 minutes, until set in center. Let cool, then cover and chill overnight. 



To serve:
Run a knife (or even better a rubber spatula)


around the edges to loosen
, then warm out for a minute the bunt-pan so it soft the caramel . Place  in a plate that's a little bigger than the pie pan on top of the pie pan, and flip upside down. Gently remove the pie pan and cut the flan into sliced portions to serve.

Brazilian Crumbs Cake

ingredients:

Dough :
. 3 cups (tea) of flour
. 1 tbsp (tablespoons) baking powder
. 1 egg
. 1 1/2 cup sugar
. 1/2 cup (tea) of cold margarine

filling:
. 1 tbsp (tablespoons) flour
. 1 can of whole milk
. 2 egg yolks
. 1 can of condensed milk
. 1 tbsp (tablespoons) margarine
. 1 can heavy cream
. 1 teaspoon (tsp) vanilla extract

Preparation:

Dough: In a large bowl, place the flour, baking powder, egg, sugar and margarine and mix well until it forms a crumbly.

Filling: Dissolve the flour in the milk, add the egg yolks, condensed milk, margarine and cook until thickened. Remove from heat, add the cream and vanilla. Mix well.

Putting together: In a form of removable rim, and put half the dough on it, the stuffing. Spread remaining dough over. Bake in preheated oven at 350 for 30 minutes or until golden.

Decorating Your Candles

I love candles and they are really easy to make it!!!  These decoupaged  candles look great displayed anywhere in the house. Just add your imagination a create a world around you.
Illustrated napkins are great for decoupage because they are very thin, what makes to look that the image was already there.
 You will need:
  1.  white craft glue (PVA)  Mix the glue with some water to create an even, transparent coating. 
  2.  scissors . 
  3. paint brush
  4. napkins with your favorite stamp.

1 - Apply a layer of glue on the position of the candle you want to hold the picture. 
2 - Trim the image you want to use.In this case we're using a red flower.. 
3 - Just let it dry a little and then apply a little more glue on top.

Chicken strogonoff

Chicken strogonoff is a great recipe served in Brazilian homes. It is such a delightful dish for a special dinner or any occasion. The point of all it is delicious!! I found the step by step at this blog: http://omelhordospecados.wordpress.com/2012/02/25/estrogonofe-de-frango-passo-a-passo/
it is in Portuguese. I will translate the steps in English.
The chicken strogonoff is usually served with white rice, potato chips and green salad.


Ingredients:
1 pound (500g) of chicken breast cut into strips

2 tablespoons all-purpose flour

1 cup of milk (250ml)

2 boxes of table cream or heavy cream (250g each)

3 tbsp (tablespoons) ketchup 

1 tbsp (tablespoons) mustard

1 medium onion, finely sliced

3 tbsp (tablespoons) tomato sauce

3.5 oz (100g)  of canned sliced ​​mushrooms

olive oil, salt and pepper to taste

 

Step 1- Let the skillet hot, add 2 tablespoons of olive oil and place the chicken breast. TIP: do not touch it for so loose less water.
The point of taking it to reserve is when he is starting to get gold just to not lose their softness. When it is well, take the pan and set aside.
 Step 2 - In the same skillet add the butter and chopped
 onion.



STEP 3 - Leave on low heat until it becomes transparent as shown in photo below.

and mix a little, pour the chicken to the pan with the onion and stir well, put a little 
more flour during this process.


STEP 5 - Mix the flour with the chicken one minute and put the milk gradually,

 some more to cook the flower.

STEP 6 - Place the tomato sauce, following add the
 ketchup and the mustard.

 stir slowly until the flavors can blend. Put some more milk to make it with alight broth.






 STEP 8 - Lastly and finally, place the sliced precooked ​​mushrooms.

Breaded Bananas

This is my daughter's favorite recipe. It is simple and delicious!!







STEP BY STEP

INGREDIENTS
6 ripe bananas 
1 cup  of wheat flour
2 cups breadcrumbs
2 eggs
½ liter of canola oil

PREPARATION
1. Put oil in a large saucepan and heat to heat.
2. Break the eggs into a bowl and beat lightly with a fork.
3. Place the flour in a shallow dish and bread crumbs in another. Peel the bananas.
4. Place the bananas in the dish with the flour. They should be fully wrapped in flour.Beat bananas slightly against the hands, removing the excess flour.
5. Remove the bananas from the plate of flour and place them (one by one) in the dishwith beaten egg. Soak them well in the egg.
6. Drain the excess egg and a banana at a time transfer to the plate with the breadcrumbs. Involve all the bananas well with this meal.
7. When oil is hot, place two sticks at a time to fry. fry until golden. Then remove them from the oil with a slotted spoon and place on a plate lined with paper towels. Serve hot.

Strawberry bonbon

Strawberry bonbon
This is one of my favorites Brazilian candy, it is delicious!!! 

12 strawberries
1 can of sweetened condensed milk
1 cup of  Powdered milk (ninho) The best you can find on the Mexican isle at walmart
10 oz of chocolate bar your favorite.
In a bowl put the powdered milk and slowly add the condensed milk. Always stir after each addition. may not need to use the entire can of condensed milk. The dough must be soft and should not stick to hands.

Make a ball and flatten with palm of hand. Wrap each strawberry with the dough. Place the candies in the refrigerator before bathing into the chocolate for 15 minutes.
Melt the chocolate. With the help of a fork Bathe in  the chocolate. Remove excess chocolate on the edge of the bowl.

Let dry on a sheet of aluminum foil or parchment paper. if you want to decorate the strawberries with the strawberry stalk.

I love them cold, they are delicious, I can't stop my self from eating!!
